For holiday gifts we love to "can" quick breads - bake them in a jar and seal them. 1/2 pints are cute and go in a basket with other goodies, and are a great size for 1 or 2. We have a lot of elder couples we give to. Also this is a great gift for our young daughter to give. Something she can make.

6 cups corn flakes

Bring corn syrup and sugar to a boil, stirring constantly. Boil for ONLY 3 minutes (any longer the balls will be hard).

Remove from heat. Stir in peanut butter. Pour over corn flakes and mix. Wait a few minutes, then roll into balls.

Vegan Crockpot Chili

1 10.75oz can tomato soup
1 6oz tomato paste
4 15oz cans tomato sauce
2 15oz cans kidney beans (one light one dark or can use black beans or any combo)
1 12oz package of fake meat crumbles (I prefer Lightlife Smart Ground brand)
chili powder, onion powder, garlic powder, black pepper to taste...and if its too acidic add some sugar, too sweet add some salt

Place all ingredients in a crockpot and cook until boiling and seasoned to y our liking! Can cook all day on low or for a few hours on high.

Cheesy Potatoes

1 large bag frozen southern style potatos (32 oz)
2 cans cream of mushroom(or celery)
2 cups shredded cheddar cheese (8 oz bag)
16 oz. sour cream
1/4 chopped large onion(if no onion in the southern potatos)

Mix all ingredients together in large bowl, spread into 9 x 13 pan, and top with 2 cups corn flakes mixed with 1/2 stick melted butter.

bake 350 for an hour.

Recipe for Chocolate dipped Pretzel sticks:

1. Buy long thick pretzel sticks
2. Melt candied chocolate. Add peppermint extract if you wish!
3. Dip each pretzel halfway into the melted chocolate.
4. Roll the melted chocolate part of the pretzel in Christmas sprinkles.
5. Set aside to dry.
6. Try not to eat them all before you give them to the neighbors!!

Recipe for White Trash:

Melt bakers chocolate and peanut butter on stove stop and mix well. Pour over Chex mix and mix well. Pour into ziploc bags and add powdered sugar. Shake until well covered.

Here's the recipe:

Cajun Spiced Pecans

2 tb Unsalted butter
3 c Pecan halves
1/2 c Light brown sugar
1 t Paprika
2 ts Powdered Chile
1 tb Ground cumin
1/4 c Cider vinegar
Salt

Preheat oven to 375 F. Melt butter over medium heat in a large skillet. Add the pecans and saute until lightly browned, about 3 minutes. Add the brown sugar and cook until caramelized. Stir in the paprika, chile powder and cumin. Add the vinegar and cook
until all the liquid has evaporated. Season with salt. Spread the pecans on a cookie sheet and bake in an oven until crisp, about 3 to 5 minutes.

Here's the recipe:

3/4 cup warm water
1/4 cup butter
2 eggs
1 1/2 teaspoons vanilla extract
3 1/4 cups bread flour
2 tablespoons white sugar
2 tablespoons dry milk powder
1 1/2 teaspoons salt
2 teaspoons bread machine yeast
1/2 cup chopped dried mixed fruit

Place all of the ingredients except for the mixed fruit into the pan of your bread machine in order directed by manufacturer. Select Sweet or Basic/White bread cycle, and use the Medium or Light crust color. Do not use the delay cycles. Add the fruit 5 to 10 minutes before the last kneading cycle ends, or when the raisin or nut signal starts.

Every year we make gingerbread cookies! We make them with my Grandma-In-Law and pass them out to the elderly in her neighborhood. Then we also make some ourselves for our neighborhood (cause its tradition).

Here's the recipe-its so good, I promise!

RASPBERRY CREAM CHEESE COFFEE CAKE
Coffee Cake:
2 1/2 cups all-purpose flour
3/4 cup sugar
3/4 cup butter
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp. salt
3/4 cup dairy sour cream
1 egg
1tsp. almond extract
In large bowl, combine flour and sugar; cut in butter using pastry blender until mixture resembles coarse crumbs. Remove 1 cup crumbs for topping. To remaining crumb mixture, add baking powder, soda, salt, sour cream, egg and almond extract; blend well. Spread batter over bottom and 2" up side of greased and floured 9" spring form pan. (Batter should be 1/4" think on sides.)

Filling:
1 8 oz. pkg. cream cheese, softened
1/4 cup sugar
1 egg
1/2 cup raspberry jam

In small bowl, combine cream cheese,sugar and egg; blend well. Pour over batter in pan.. Carefully spoon jam evenly over cheese filling.

Topping:
1 cup remaining crumb mixture
1/2 cup sliced almonds

in small bowl, combine reserved flour mixture and almonds; sprinkle over top. Bake at 350 degrees for about 55 minutes or until cream cheese filling is set and crust is deep golden brown. Cool 15 min. Remove sides of pan. Serve warm or cool. Cover and refrigerate leftovers. Yield 16 servings.

Entry 3: recipe for Pumpkin Chocolate Chip Muffins

4 eggs
2 cups sugar
1 (16 oz.) can pureed pumpkin
1 1/2 cups oil
3 cups flour
2 teaspoons baking soda
2 teaspoons baking powder
1 teaspoon ground cinnamon
1 teaspoon salt
1 package chocolate chips

In a large mixing bowl, beat eggs, sugar, pumpkin, and oil until smooth. Add in dry ingredients and mix well. Fold in chocolate chips. Fill greased or paper-lined muffin cups 3/4 full. Bake 16-20 minutes at 400 degrees. Makes 24-30 muffins.

The treat I love to bake for neighbors and friends is cake balls. They taste like delicious truffles, but are so much easier!

Bake a box of cake mix according to directions. Let it cool about 5 minutes. While it is still hot, crumble the cake into a clean mixing bowl. Mix in a container of frosting. Stir until it forms a mushy mixture. Cool in the fridge for about an hour. Form balls of the cake/frosting mixture. Let them set in the freezer about 30 minutes. Dip in melted chocolate.

This recipe is great and can easily make several different flavors of "candy."

Can't share my fudge recipe, but can share my Chocolate Chocolate Truffles.
Grind/crumb and entire package of Oreos. Mix in one pkg. softened cream cheese. Mix really well until a chocolate ball is formed.
Roll into small cookie balls the size of a dime. Refrigerate 20-30 min. to set the cookie balls.
Melt chocolate almond bark and cover the cookie balls in almond bark.
Cool and serve.

White chocolate/cranberry cookies

1/2 cup butter, softened
1/2 cup packed brown sugar
1/2 cup white sugar
1 egg
1 tablespoon vanilla or brandy
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
3/4 cup white chocolate chips
1 cup dried cranberries

mix and bake at 350 for about 10 minutes. (i'm not a very precise baker, sorry)
